Summer Rolls with a Peanut Dipping Sauce

Serves 2 people

Prep time: 20 minutes

INGREDIENTS:

- Summer Rolls

- 6 rice papers

- 150 grams of Japanese Tofu Filets (sliced into small strips)

- 1/3 of a cucumber (sliced in small strips)

- 2 hands full of grated carrot

- 25 grams of spring onions (chopped into small pieces)

- 70 grams rice vermicelli noodles

 

Fresh coriander Peanut Dipping Sauce:

- 6 tbsp peanut butter

- 1 tbsp rice vinegar

- 1 tbsp maple syrup

- 2 tbsp soy sauce

- 1/2 tbsp fresh grated ginger

- 2-4 tbsp of warm water

- 1/2 tbsp fresh grated ginger

- 2-4 tbsp of warm water


STEP BY STEP:

STEP 1: Boil the rice vermicelli for as long as the package instructs, drain them and rinse with cold water.

STEP 2: Fill a large deeper plate with hot water to soak the rice papers in. Wet a surface to make them on. Soak each rice wrapper for 5-10 seconds and place them on the wet surface.

STEP 3: Start filling the rice paper in the middle with rice vermicelli, grated carrot, cucumber, spring onion, tofu and fresh coriander. Don’t overfill them, they won’t close nicely.

STEP 4: First fold one side of the rice paper over the fillings, then the shorter sides on the sides of the rice paper, then roll it over to close the summer roll (watch a tutorial if needed).

STEP 5: Stir all the ingredients above together to make the dip. Add more or less water to create your preferred consistency.
